From Italy’s Streets to Fort Collins
At La Piadina, we bring a piece of Italy’s street food culture to the heart of downtown Fort Collins. A piadina (pronounced pee-ah-dee-nah) is a thin, griddled Italian flatbread folded around fresh ingredients. It is simple, delicious, and full of history. Loved for centuries in the Emilia-Romagna region, it now has a new home here in Colorado.
A Fresh Start
When we, Chase and Dana Morgan, discovered La Piadina, we fell in love with its idea: honest food made from scratch with the same passion you would find at a small café in Rimini. In 2025, we took over the space at The Exchange in Old Town Fort Collins and began reimagining what this tiny 220-square-foot kitchen could do.
Our goal was simple. Keep the heart of the original concept but elevate everything: the ingredients, the experience, and the sense of community around it. Today, every piadina we serve is made fresh to order using authentic imported Italian flour and the best local produce and meats we can find.

La Piadina is not fast food. It is real food made fast. Every order starts with dough pressed by hand, cooked to a golden crisp, and filled with combinations that celebrate both tradition and creativity. From the L’Originale to the Quattro Stagioni and the indulgent Golosa Dolce, each piadina tells a story about quality, comfort, and craft.
Rooted in Community
We are proud to be a local, family-owned restaurant that serves the Fort Collins community and belongs to it. You will find us chatting with guests on the patio, teaming up with nearby small businesses, or cheering on CSU on game days. Whether you are stopping by for lunch, grabbing a quick bite before a show, or picking up an order to take home, you are always part of the La Piadina family.
